Mac cheese

I don't think I've ever met anyone that doesn't like macaroni cheese. It used to be one of those staple family meals, pretty cheap to make and filling. Now with the price of dairy it's not as cheap as it used to be but without a meat component, it's still affordable. 

A few years ago I flatted and did shared cooking with two boys (it was great except for the time I came home to find a not-so-dead-eel in the bottom of the fridge). . One specialised in mashed potato with everything (including with roast potatoes) and made damn good yorkshire puddings. The other made some incredible macaroni cheese - I think it was his mum's recipe. 

I was leafing through my cookbooks the other day, the one's I've handwritten a lot of recipes into, and stumbled across his legendary mac cheese recipe. So today I made it to take into work for dinner. I added cauliflower and chives from the garden to mine. One word. Scrummy! Awesome if you can't be bothered whipping up a white sauce (easy for kids to make too). 

Jeff's Mac Cheese

1 3/4 cup mac elbows
2 cups cottage cheese
1 cup sour cream
1 egg, slightly beaten
3/4 tsp salt
dash pepper
heaps of cheese (I used edam and parmesan)
paprika

Cook mac and drain. In a bowl add everything except paprika, then add the mac, stirring it in well. 

Put everything into a lasagne dish, sprinkle paprika over and then bake at 180 degrees for 45 minutes.
